This was possibly a taste of things to come from me personally, but maybe the reality is that most of us have moved away from a “meat and two veggies” diet. This is, of course, an inevitable consequence of the explosion of interest in all things relating to food. We travel more and seize the opportunity to sample different cuisines, new flavors, and ingredients that were completely alien to our parents. There is also now a far greater variety of foods widely available, gathered from the all over the world. Television programs, food magazines and cookbooks all fuel our desire to enjoy an ever-widening feast of interesting flavors. All this has helped the vegetarian cause tremendously. Moral issues aside, people have discovered that there are so many nonmeat-based cuisines around the globe from which to draw new inspiration, and so meat (like my mother’s roasts) has been pushed aside. How many people eat as much meat as they did even ten years ago? My aim in this book is to show that vegetarian cooking has thrown off its dull yet worthy image for good, epitomized by the token vegetable lasagna or the equally dreary vegetarian alternatives that some restaurants used to (and still do in some cases) offer. Whether you are a confirmed vegetarian or a carnivore seeking a fresh approach, here is a collection of recipes to excite and delight—a heady mix of stimulating flavors and diverse culinary practices. And it is all fast food! There’s a medium-sized scuff mark and a couple of small tears, located in the upper right hand corner, of the front cover of the book itself. The main pages are lightly yellowed.
